Roasted Eggplant Parmesan

Here’s another recipe shared with us by Grow Eco member, April. It’s very simple to put together, but does take a little more time than most dishes because of having to bake the eggplant separately before layering up the ingredients in the dish and then baking the whole thing again, but it’s certainly worth the wait! Also, I found it quite easy to veganize, so don’t stop here if cheese isn’t your thing.
